For some reason everytime I make these, I also like to make my insanely delicious guacamole, I think the textures, flavors and colors make such a great contrast.

Yield: depends on size of sweet potatoes but 2 medium ones will yield one oven tray.
Time: 45 min
Ingredients
2 sweet potatoes cut into slices a couple of cm thick. (Skin on)
Salt and pepper to taste
2 Tbsp (30 ml) olive oil
1 cup (110 gr) vegan mozzarella
2-4 Tbsp (30-60 ml) tomato puree
Suggested toppings
Cherry tomatoes
Fresh herbs
Mushrooms
Red peppers
Directions
1. Preheat oven to 180C
2. Wash the sweet potato but you don’t need to peel them. Cut them into slices of about 2 cm thick.
3. Place the sweet potato slices in a bowl. Toss the olive oil, salt, and pepper and coat them well.
3. Place the sweet potato slices in a lined baking tray and put them into the preheated oven for 15 min.
4. After 15 min flip them with a spatula and keep baking for another 15 min (or until you see that they are lightly brown)
5. At this point, take them out of the oven and add on top of each slice the tomato sauce, mozzarella, and the toppings of your choice and put them back in the oven for another 5-7 minutes until the mozzarella has melted.
By the way…
You can use any topping you like, just think of these mini sweet potato bites as mini healthy versions of pizzas and add whatever you would normally use in your favorite pizza. If you want to avoid all the chopping and topping prep, you can also just use shredded mozzarella and top it with some fresh or dry basil for a Napoli pizza experience. Also deliciously simple.
