Careful, these little guys are more filling than you think, I have never been able to eat more than 3 in a row. I like to make them on Sunday together with my meal prep so that I am sure I will have healthy snacks to grab and go during the week.

1 cup (150 gr) pitted dates
1/2 cup (50 gr) almond flour
1/4 cup (20 gr) shredded coconut
1/4 cup (25 gr) cranberries
Pinch of salt
Directions
- Add the dates to a food processor or small chopper (I am using the latter since I don’t own a food processor…). If your dates are very dry and hard soak them first for 20 minutes, then process until a ball forms or until they are chopped and just little pieces remain.
- Add the rest of the ingredients and pulse to combine.
- Form balls with your hands of the size your prefer.
Notes
- By the way …. You can dip the balls once formed in raw cacao powder, nuts, shredded coconut, etc.
- If you don’t have a food processor or a mini chopper you could do it by soaking first your dates so that they become really soft and then mashing them with a fork. You would then have to finely chop the cranberries. Although it requires a little bit more patience, is definitely possible.
- Dates are incredibly nutritious, and packed with fiber and antioxidants.
