This sugar-free energy balls are the perfect solution for a fast, sugar-free and energy-boosting snack. You basically need to toss together some nuts, dates, oats and nut butter and listo! you have a filling delicious guilt-free snack for any time of the day.
The first time I made these delicious little balls was because of a one month sugar-free challenge I had with a friend, I have such a sweet tooth that I had to get creative to survive! Well… the challenge was over and now I make them at least once or twice a month because not only they are so versatile but also you can really eat them whenever you feel like snacking on something sweet and you don’t want to cook or eat unhealthy processed junk food…
I love how easy these balls are to make, you can come up with any kind of combination with just a bunch of dates. You can get as creative as you feel, rolling them with a hazelnut inside (Ferrero Rocher style) combinations are absolutely endless as soon as you get a sticky ball to roll.
There is another flavor that I LOVE, my cranberry coconut energy balls… Simply delicious.

Gluten-free, Sugar-free, Vegan
Yield: 12-14 balls
Time: 15 min
Ingredients
1 cup (100 gr) rolled oats
1 ½ cup (150 gr) pitted dates (if they are very hard, soak them for a few hours)
¼ cup (20 gr) grated coconut
4 Tbsp (60 gr) peanut butter
2 Tbsp cocoa powder
¼ cup (50 gr) hazelnuts or almonds.
1 pinch salt
1 tsp cinnamon (optional)
1 tsp vanilla (optional)
Directions
1. Put everything in a food processor and process until you have a sticky dough.
2. Make small balls with your hands, and then roll them over grated coconut, chopped nuts, cocoa powder or just leave them like that.
By the way…
You can also use any other nut butter if you don’t like peanut butter, and you can also use walnuts, pistachio, or any other nut of your choice, try different combinations, as soon as the dough is sticky anything works here.
You can store them in the fridge in an air-tight container for about a week or you can also freeze them for about a month.
