I ate this roasted radish toast for the first time in a vegan restaurant in Rotterdam, and I was thrilled! The original recipe was with roasted garlic as well, but when it comes to a toast I do prefer to rub fresh garlic on the bread rather than eating roasted garlic. So I adjusted the original recipe.
I wanted to experiment also with adding some intense flavour to it, as the radish becomes sweet, tender and soft after roasted, so I went for a mustard dressing. However it was too strong, so I added maple syrup to make it match with the radish. Delicious combo! I also added some chili flakes on top but I think it was a little too much, which is why I have not added it to the recipe, but if you want it spicier go for it.
It is overall, a very simple option for a different breakfast. Yeah it does have oven time, but I actually love any recipe that requires oven as it gives me time to do other things while baking 🙂
Radish are very healthy (1), packed with vitamins, antioxidants, potassium, folate… If for some reason you don’t have bread, you can always make my emergency buns 😉

Yield: 2-3 toasts
Time: 20 min
Ingredients
200 gr radish
1 Tbsp avocado oil
Salt and pepper to taste
1/4 cup finely chopped rosemary
Dressing (optional)
2 Tbsp mustard
1 Tbsp maple syrup
Juice of half lemon
Directions
1. Preheat the oven to 200C
2. In a bowl, combine the radishes, avocado oil, salt, and pepper and toss until radishes are evenly coated.
3. Spread out radishes out on a single layer in a baking tray lined with parchment paper.
4. Bake for 20-25 minutes, tossing halfway through.
5. Take out of the oven let cool a couple of minutes while you rub fresh garlic on your toasted bread. Serve the radish on top of the toast. Drizzle with the mustard dressing and sprinkle chili flakes if you like it spicy.
