I am a fanatic of peanut butter-jelly! I use this combination quite a lot, like in my chia puddings. So I find myself making this portable and nutritious snack very often… You don’t need to stew the berries as I did, I just don’t like that much to use store bought jam, because of the high amount of sugar it contains, and since I find that the banana and berries are already naturally sweet I always try to stay away from store bought versions. But of course you can use jelly jam as well, if you prefer or if you don’t feel like stewing some berries.

Ingredients

  • Toast bread of your choosing ( I like to use sesame and flaxseed toasts)

  • Banana (as many slices/coins as the size of your sandwich)

  • Peanut butter (as much as you want to spread)

  • Frozen berries

Directions

  • Make your stewed berries by adding your frozen berries to a small saucepan until they soften and melt, leaving some chunks. Find here the full recipe for more details.
  • Spread peanut butter on top of both slices of your sandwich and top one of the slices with banana coins.
  • Add on top of the banana your stewed berries and close the sandwich.

  • Did you know that peanut butter and jelly were on the US military menus in WWII? Apparently since peanut butter is really high in protein and portable it made a perfect snack with the added sweetness and vitamins of the berries…I came across this article and found it interesting if you want to know the story of this infamous combo of flavours.
