These peanut butter and chocolate bonbons came by chance, I was developing a video of healthy vegan snacks, and after making this amazing chocolate covered strawberries and this peanut butter jelly banana sandwich.
More than a recipe is an idea for when you have some leftovers of melted chocolate and you don’t want to waste it… It has already happened to me a couple of times that I keep this melted chocolate and I end up not using it soon enough and it goes to waste…
Peanut butter is really nutritious, you just have to read the label and stay away from those that list in their ingredients oil, sugar, salt or additives so look for brands that are 100% peanuts. Peanut butter is a great protein source, is low in carbs and high in healthy fats, rich in vitamins, antioxidants and minerals. (1)

kcalIngredients
Peanut or almond butter
Melted dark chocolate
Directions
- Using cupcakes paper cups (I am using super tiny ones, bite sized), fill about 1/3 of it with melted chocolate, another 1/3 of nut butter and top it with more chocolate.
- Pop it in the fridge for at least an hour and enjoy!
Notes
- By the way … You can use any kind of chocolate, I just want to keep it healthy and dairy free which is why this time I used dark one. You can also add nuts inside, like an almond or a hazelnut to make it more Ferrero Rocher style.
- If you don’t like it very hard, right out of the fridge, before eating it take it out of the fridge for 10 min and it will soften.
