This orange zest avocado salad is perfect for hot days. With this heatwave, the last thing I want is to get into the kitchen, turn on the oven and melt making a dish that later I will not even want to eat if it is not light and fresh. It combines the sweetness of the orange, the creaminess of the avocado, the freshness of the tomato, and the parsley in a bowl. Drizzled with a little bit of olive oil, and sprinkled with salt and pepper, is one of the most summery salads that I have tasted so far.

Ingredients
10-12 cherry tomatoes
1/2 red onion
1 avocado
1 small jalapeno pepper
Zest of 1 orange
1 cup fresh parsley
Pepper and salt to taste
Olive oil to drizzle
Directions
1. Cut your tomatoes in halves, onions and avocados in cubes, chop finely the jalapeno and parsley, and zest one orange.
2. Add all the ingredients to a large salad bowl, toss to combine, sprinkle with salt and pepper and drizzle with olive oil.
By the way…
Feel free to play around with the ingredients and the amounts or to add or leave out anything to your liking. You can also substitute parsley for coriander, olive oil for avocado oil, etc.
I recommend to serve and eat immediately, as the avocado will turn brown fast. Otherwise, try drizzling it with lemon juice to keep it green longer.
