This one-pot protein feast pasta is packed with lentils, which are incredibly nutritious (1) they are loaded with polyphenols, that fight against harmful agents in the body—everything from ultraviolet rays and radiation to heart disease and cancer. They are a good source of iron and protein. Just 1 cup of cooked lentils contains 16 gr of protein.

I like to eat this protein packed dish whenever I feel tired after a week of hard training. It is full of fiber, calcium, folic acid and magnesium.

Ingredients

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 onion, chopped

  • 1 carrot, chopped

  • 1 vegetable bouillon cube

  • 1 Tbsp Italian seasoning

  • ½ tsp red chili pepper flakes

  • 1/2 tsp paprika

  • 250 ml passata

  • 400 g can cubed tomatoes

  • 500 ml water

  • 1/4 cup sun-dried tomatoes, chopped

  • 300 gr lentil pasta (you can use any other)

  • 300 gr cooked brown lentils, drained and rinsed

  • ½ cup olives, halved.

  • 2 Tbsp capers

  • 1 handful parsley

  • 1/4 cup fresh basil to garnish

Directions

  • In a large pot on medium heat cook the olive oil, garlic, onion, carrot for 5 min. Add salt and pepper to taste, the vegetable bouillon cube, italian seasoning, paprika and red chili flakes for 3 more minutes.
  • To the same pot add the passata, cube tomatoes, sun dried tomatoes and water and let the sauce cook in medium- low heat for 15 minutes with the lid on.
  • Add then the cooked brown lentils, black olives, capers, parsley and pasta for 3-5 more minutes stirring every now and then.*
  • Serve and garnish with basil leaves and chili flakes.

Notes

  • By the way … Normally lentil pasta is cooked in less than 5 minutes. The one I am using today is cooked in only 3 minutes. Read your package instructions and if your pasta needs longer than 3 minutes just add it before, while your sauce is being cooked. If your pasta needs 10 minutes for instance, you add it to the tomato sauce after 5 minutes of the sauce being cooked so that you get the pasta 10 minutes in the pot, then you just carry on with the rest of the recipe.
