These are my favorite chocolate oat cookies. It is such an easy recipe, that uses totally simple ingredients that for sure you already have in your pantry.
They are done in less than half-hour and the best thing is that you can freeze a big batch and have it ready for whenever you have a special occasion, guests, birthdays, or simply a chocolate cookie craving!

Gluten-free*, Nut-free, Vegan
Yield: 20-25 cookies
Time: 30 min
Ingredients
1 cup (100 gr) rolled oats
1 cup (120 gr) all purpose flour, gluten-free if necessary
1 tsp baking soda
1/2 tsp salt
1 cup (200 gr) brown sugar
1/2 cup (100 gr) vegan butter
1 tsp vanilla
1/4 cup (60 ml) almond milk
150 gr chocolate chips
Directions
1. Preheat the oven at 180 C
2. Add the rolled oats, all purpose flour, baking soda and salt to a mixing bowl and mix together.
3. Whisk the vegan butter and brown sugar together until creamy and then add the vanilla.
4. Add the dry ingredients into the wet and stir.
5. Add the milk and adjust in case you need more. Fold in the chocolate chips leaving some to place on top.
6. Roll into balls, place onto a parchment lined baking tray and bake for about 10-15 min.
7. Let them cool slightly and then transfer them to a cookie rack to cool completely.
By the way…
I use to prepare a big batch of these balls and keep them in the freezer in an airtight container. Whenever I want to bake them, I just remove the dough balls from the freezer, set them on a parchment-lined baking sheet, and cover with a cloth to let them thaw for about 2 hours. After that, I just bake in a preheated oven at 180C for 8-10 min (as in the normal recipe)
