LIGHTEST Apple Cake EVER

This is the lightest apple cake ever! it is probably one of my favorite guilt-free recipes when I am craving something sweet. You will not believe it does not have ANY SUGAR in it!

One apple a day keeps the doctor away. I guess you already know how healthy apples are (1), but now you will discover that when you use it baked it makes your desserts incredibly sweet so you won’t need to add any other refined or unrefined sugar at all.

Sugar-free, Nut-free, Gluten-free, Vegan
Yield: 6 servings
Time: 1 hour

Ingredients
1 cup (100 gr) oatmeal* (for gluten-free get sure to get gluten-free certified oatmeal.)
1 pinch of salt
1 tsp baking powder
3 apples
1 cup (250 ml) vegan yogurt of your choice
1/2 cup (125 gr) unsweetened applesauce
1 tsp vanilla extract
1 tsp cinnamon (optional)

For the Streusel
½ cup (50 gr) Spelt flour
¼ cup (25 gr) almond flour
¼ (25 gr) rolled oats
3 Tbsp coconut/ brown sugar
3 Tbsp (45 ml) coconut oil at room temperature
2 Tbsp (30 ml) maple syrup
1 pinch of salt
1 tsp cinnamon (optional)

Directions
1. Prepare the Streusel first. To do this, mix all the ingredients in a bowl with the help of a fork or your hands until well integrated.
2. Place it in the fridge while you make the cake.
3. In a bowl mix the flour, pinch of salt, baking powder, and cinnamon and reserve.
4. In another bowl whisk the applesauce and then add the vanilla and the vegetable yogurt. Stir until well combined.
5. Add the flour mixture to this bowl and mix, integrating everything carefully. Do not overmix. Reserve.
6. Cut your apples into thin slices and small pieces (they don’t have to be the same, but try to make them rather thin). If your apples are organic, you don’t have to peel them.
7. Mix the apples with the dough carefully, making sure that all the apples are well impregnated.
8. Pour the mixture into a baking dish previously greased and floured.
9. Pour over the streusel with your hands, crumbling it and distributing it over the cake. Bake for about 1 hour at 180 C.
10. Remove from the oven, let cool or eat warm 🙂

By the way…
*If you don’t have oatmeal you can use rolled oats and blend them in your food processor until you get oat flour. You could also use any other flour, I did it once with a mix of almond and spelt flour and it was delicious as well.
