This insanely delicious guacamole is my favorite version and probably the easiest. I do it whenever I have guests as a starter, and I serve it with whole wheat or corn tortillas, veggies like carrots, cucumbers and peppers. I don’t always top it with pomegranate but whenever I do it is always a hit because of the flavor these little seeds give to it. You have to try it!
What is really important for this guacamole is that you choose really good quality ingredients. The avocados have to be ripe but firm and I really do not like when they are dotted on the inside. Here is a little tip, choose the ones in the supermarket that have the stem on them as that means that they will be green and beautiful inside. Also press it gently and pick the ones that feel slightly soft but not mushy to the touch. Those are the ones ready to make guacamole with!
I like to make big appetizer trays with guacamole, hummus of different flavors like my roasted pepper hummus, etc. On top of that guacamole is super healthy and nutritious. (1)

Yield: 5-6 servings
Ingredients
3 ripe but firm avocados
1 red chili thinly cut.
1/3 chopped red onion
8 cherry tomatoes cut into 4
1-2 finely chopped garlic cloves
Juice of 1 small lemon
1 tablespoon olive oil
1/2 teaspoon sea salt
Garnish
3 tablespoons chopped fresh coriander or parsley
1 handful of pomegranate seeds
Directions
1. Cut the avocados in half, remove the pit and skins and scoop them into a mixing bowl. Mash with a fork until you get the texture you like, if you like it chunky, don’t mash it completely and leave some pieces.
2. Stir in the rest of the ingredients until they are well combined.
3. Serve and top with pomegranate seeds and some fresh parsley.

How to store guacamole leftover and prevent it from turning brown? This is literally the only trick that has ever worked for me. All you have to do is place your guacamole in a container and pat it down firmly. Pour a thin layer of water (about 1 cm) over the guacamole to form a barrier. Then close the container with the lid and place your guacamole in the fridge. It will be at least 2-3 days perfectly fresh. When you are ready to eat it remove the water and that’s it!
