Immune System Salad

200 gr fresh spinach
400 gr strawberries, sliced
1/2 cup (50-100 gr) almonds
1/4 red onion, finely sliced
Dressing
1/4 cup (60 ml) balsamic vinegar
1/4 cup (60 ml) extra virgin olive oil
2 Tbsp (30 ml) maple syrup
1/2 tsp salt
Black pepper to taste
Directions
- Toast the almonds first. Preheat the oven to 180C and spread your almonds on a lined baking tray. Bake for about 10 min just until lightly toasted. Let them cool and chop.
- Slice the onions thinly, the strawberries the way you want and with your hands roughly break the spinach leaves into bite size pieces.
- Prepare the dressing: mix all the ingredients in a measuring cup or mason jar and shake very well.
- Assemble the salad: Add the spinach to a large serving bowl, then the strawberries, onion and drizzle with the dressing. Do not put too much or it will become soggy. Top with the toasted almonds and enjoy!

- *For a nut-free version just leave the almonds out and replace them with pepitas, sunflower or pumpkin seeds to get a crunchy salad.
