This immune booster salad combination sounds strange but I assure you it is delicious. It is an incredibly nutritious 4-ingredient salad that is a vitamin C cocktail.
One cup of redcurrants contains 77% of the vitamin C daily requirements (1). One orange offers 116%, the juice of one lemon provides about 18.6 milligrams of vitamin C, avocado among others, contains also vitamin C, and mint is a common natural cold and flu remedy. So imagine what this salad can do for you when you are sick or feeling under the weather.
Alternatively you can just have a juice if you don’t feel like eating, like my immune anti-cold juice.

Ingredients
2 oranges
1/2-1 cup redcurrants
1 avocado
1 handful fresh mint leaves
Black pepper
Juice of half lemon
2 tablespoon avocado oil (you can also use olive oil)
Directions
1. Peel the oranges and cut them into slices, peel and cut the avocado as you like (I have cut it in wedges).
2. Plate oranges, avocado sprinkle with redcurrants and mint leaves.
3. Crush some black pepper on top, drizzle with lemon juice and avocado oil.
By the way…
I don’t use to have redcurrants at home, so if you don’t have you can use other berries like pomegranate for example.
I don’t recommend to make this salad ahead, it just takes 5 minutes and the avocado would get brown. So better make when you are going to eat immediately.
