French Apple Cake

I have always loved any dessert that include apples in it, but this French Apple Cake I think could be my favorite. It is spongy, light, full of flavor and the rum makes the perfect combo with the sweetness of the apples.

Apples are incredibly healthy, and consuming them often is linked to a lower risk of diseases like diabetes and cancer. (1)

Ingredients

  • 1 cup (125 gr) all purpose flour

  • 1 tsp (5 gr) baking powder

  • Pinch of salt

  • 1/2 cup (120 gr) unsweetened applesauce

  • 1/2 cup (100 gr) granulated sugar

  • 1/2 cup (125 ml) vegetable oil

  • 1 tsp (5 ml) vanilla extract

  • 2-4 Tbsp (30-60ml) dark rum

  • 2 apples cored, peeled and cut into cubes

Directions

  • Preheat your oven to 180C and grease your cake pan.
  • Mix the dry ingredients: flour, baking powder and salt.
  • In another bowl mix the sugar and applesauce.
  • Add the oil, vanilla and rum and combine.
  • Add the flour mix and using a spatula mix it gently until incorporated. Do not overmix.
  • Fold in the apples carefully to not break them.
  • Pour the batter into your cake pan, sprinkle a little bit of granulated sugar and bake for about 40-45 min until the top is golden.
  • Let cool, and dust with confectioners’ sugars if you want.

Notes

  • By the way … If you want to freeze this cake, first let cool completely, then place in a freezer bag, I have never done it as we literally eat the whole cake the same day it comes out of the oven but I believe it will be anyway delicious.
I don’t think this cake will last until tomorrow…
