What I try to do is avoid then syrups (maple is the one I normally use) and just top it with stewed berries sauce which I do in about 4 minutes while I am flipping the pancakes in my huge stainless steel skillet.
Fluffy pancakes
We use to take them with our homemade sugar-free Nutella and banana coins or strawberries… Either way, they are super fast and easy to do and really delicious and fluffy… I sometimes use baking soda to make them even fluffier, but this is really my easiest and quickest Sunday version…

These fast and easy fluffy pancakes are my naughty version of the oatmeal ones that I normally do. I would be lying if I say I don’t like the original wheat pancakes every now and then…

Let’s go!

Gluten-free*, Nut-free, Vegan
Yield: 7-8 pancakes
Time: 20 min

Ingredients
1 cup (120 gr) all purpose flour
2 Tbsp (20 gr) brown sugar
1 Tbsp baking powder
½ tsp salt
1 cup (250 ml) almond milk
1 Tbsp (15 ml) apple cider vinegar
1 tsp vanilla

Frozen berries (optional), to make stewed berries.

Directions
1. In a medium bowl, add the dry ingredients; flour, sugar, baking powder, and salt, and stir to combine.
2. Pour the wet ingredients into the mixture and whisk until smooth.
3. Let batter rest for a couple of minutes while you heat your pan.
4. Pour about 1/4 of batter onto a nonstick pan or griddle over medium heat. When the top begins to bubble, flip the pancake and cook until golden.
5. Serve with your favorite toppings.

By the way…
You can top it with my stewed berries sauce or with this delicious sugar-free Nutella naturally sweetened with dates.
