Okay so… If you got these fast “emergency” buns in your favorite bakery… yes, you would probably be disappointed. I personally am not crazy about these buns when eaten on their own, but as an accompaniment to spoon dishes, for dipping, to spread with hummus… they do the job.
I made my curry lentil soup the other day and I love dipping the bread on it, so when I was setting the table I realized I did not have bread and the supermarket was already closed so… I came up with these ones.
I was not sure about including them as a recipe but honestly, is not the first time that I am thinking about what to do for dinner and suddenly I realize that what I actually am craving is a dish that needs to go with bread or would be incomplete and not as tasty or enjoyable. So I decided to include them as an emergency super fast bread alternative since these are the perfect option for when you have run out of bread and the dish you are going to prepare requires bread, cos otherwise that dish is … not the same.
Let’s go!
Nut-free, sugar-free, Vegan

Time: 30 min

2 tablespoons (30 ml) extra virgin olive oil
Directions
1. Mix all the ingredients in a bowl, and work the dough with your hands until you have a ball that is neither very sticky nor very dry. Adjust with water if it is very dry and with flour, if it is very sticky.
2. Let the dough rest for 15 min -½ hour
3. Divide the dough into 4 pieces and make 4 balls
4. Without preheating the oven place the 4 balls at 200C for about 20 min in a lined baking tray.
