This is hands down the easiest burrito ever. No cooking required, it comes together in 10 mins and is absolutely versatile. I like to keep a base of homemade hummus (I experiment with different hummus flavors each time) and the black beans filling for some extra protein and to have a complete meal or snack when I don’t want to cook.
Beans are a great protein replacement for meat, and they have many health benefits, including reducing cholesterol, decreasing blood sugar levels and increasing healthy gut bacteria (1), so don’t think that because it is a simple burrito this is not a great and nourishing meal!

Easiest Burrito Ever

Tortillas (gluten-free if necessary)
Black bean filling
1 cup (180 gr) canned black beans, drained and rinsed.
1/2 lemon juice
1/2 tsp garlic powder
1/2 tsp cumin
1/2 tsp paprika
Pinch of salt and pepper
2 Tbsp (30 ml) tahini
Lettuce or spinach
Parsley
Red bell pepper, sliced
Purple cabbage, sliced.
Hummus (Home Made Hummus)
- Optional
Sriracha
Vegan Tzaziki, or any other sauce of your liking
Directions
- Prepare your black beans filling by mashing with a fork 1 cup canned black beans previously drained and rinsed. Add then the lemon, garlic powder, comin, paprika, salt, pepper and tahini and combine well with the same fork.
- Add the fillings to the bottom half of the flour tortilla. First spread some hummus, then add the black bean filling, sriracha, bell pepper, cabbage, spinach or lettuce, parsley and top with with some vegan tzaziki, or yogurt sauce (plant based if vegan).
- Fold the bottom of the tortilla up and over the filling, and pull the filling back toward the bottom third of the tortilla. Then make two folds on either side of the large fold. Roll it up using the tips of your fingers to tuck and press the filling into a tight cylinder.

- By the way … The best thing about burritos is how versatile they are, play around with the filling; you can add leftovers of rice, chickpeas, and about any other vegetable you have on hand. As soon as you can roll it you have a burrito.
