I usually cook it as a stand-alone side dish and serve it with plenty of vegetables, but you can also serve it in a pita pocket, flatbread, or as part of an assortment of appetizers ( meze).

This is probably the easiest baked falafel recipe I know, with a few ingredients everything comes together in about half-hour. Really nutritious and healthy this is such a nice way of incorporating chickpeas to your diet.

Falafel is high in fibre and protein, is loaded with vitamins and minerals, it helps control your blood sugar levels and is very low in calories especially this baked version compared to the deep fried ones (1)

Gluten-free, Sugar-free, Nut-free, Vegan
Yield: 8-10 patties
Time: 30 min

Ingredients
400 gr canned chickpeas
1/2 chopped onion
2 cloves fresh garlic
1/2 cup fresh parsley (or cilantro)
1 Tbsp olive oil
Juice of a half lemon
1 tsp ground cumin
1 tsp sea salt
Pinch of cayenne
Pinch of smoked paprika
3 Tbsp oat flour (check gluten-free for gluten-free option)

Directions
1. Preheat your oven to 180 C and line your baking sheet with baking paper.
2. Add chickpeas (drained and rinsed), onion, garlic, oil, parsley, lemon juice, cumin, salt, cayenne, and paprika into a food processor (a chopper will also work here) and pulse until just combined. Do not over-process.
3. Stir in oat flour.
4. Form small patties with your hand and place it on your baking sheet.
5. Bake 10-15 minutes, flip patties and bake for another 10-15 minutes or until falafel are golden and cooked through.
6. Serve with this delicious tahini sauce

By the way…
It is important that you don’t overprocess the mixture, the best is to start with a few pulses especially if you have a powerful food processor, otherwise, your falafel will turn instantly into hummus, which is okay just not what you are looking for right now…
You can add more garlic for a more garlicky version, I just like it better like this in general although sometimes I add one or two extra cloves.
