This double roasted tomato pasta is a very simple recipe but works so good. The combination of the tomato sauce, roasted cherry tomatoes and sun dried tomatoes makes it completely full of different touches, aromas and textures. Double Roasted Tomato Pasta

1 white onion
2 garlic cloves
1/2 red chili
1 tin (400 ml) chopped tomatos
1 cup water
1 Tbsp Italian seasoning
1 tsp paprika
1 tbsp (15 ml) olive oil
Salt and pepper to taste
1 cup (200 gr) cherry tomatoes
1/4 cup (40 gr) sun-dried tomatoes
300 g pasta
Directions
- Slice your tomato cherries in halves, drizzle with olive oil, salt and pepper and place them on a baking tray with the part of the cut up. Roast them at 140 C for about 30 min.
- Heat olive oil in a deep pot. Add onion, garlic and chili and saute for about 5 min. Add in the tomato can, paprika, Italian seasoning, sun dried tomatoes and water and mix well. Reduce your heat to a gentle simmer for about 20 min (cover your pot).
- In the meantime cook your pasta according to package instructions.
- Drain it, add it to the pot with the sauce, combine.
- Top it with the roasted tomatoes and basil or parsley leaves.
