Delicious Baked Zucchini Fries

This delicious baked zucchini fries are a great snack, gluten-free, low-carb and keto-friendly and you can enjoy it either with a dressing or on its own. I do not like when the zucchini fries are excessively soggy, but the more cheesy you like it, the more nutritional cheese you can use until you form like a baked crust 🙂

In case you did not know zucchini is really nutritious (1) rich in different nutrients, high in vitamins and minerals, loaded with antioxidants…

Let’s go!

Gluten-free, Nut-free, Sugar-free, Vegan
Time: 40 min (including cooking time)
Yield: 2 people

Ingredients
2 zucchinis
1/2 cup (125 ml) plant milk
1/3 cup (40 gr) flour
1 cup (100 gr) bread crumbs
2-3 Tbsp nutritional yeast
1 tsp garlic powder
1 tsp Italian seasoning
1/4 tsp Paprika
Salt and pepper to taste

Directions
1. Preheat oven to 220 C, and line a baking tray with parchment paper.
2. Cut your zucchini into long fry shapes (thin or thick) however you want them but keep them in a similar size so they cook evenly.
3. In a bowl mix bread crumbs, nutritional yeast, garlic powder, italian seasoning, paprika salt and pepper.
4. Place your 3 bowls; flour, plant milk, bread crumb mix and coat your zucchini fries (one at a time) in that order and place them in the baking tray.
5. Bake for 20 min, flip and bake for an additional 10 min or until golden.

By the way…
This snack is to enjoy right out of the oven as it will become very soggy after a bit, so prepare your dressing, set the table, the drinks, and as soon as it’s baked enjoy it without hesitation!
