Carrot and Orange Smoothie Bowl

I made this carrot and orange smoothie bowl by chance, because those were the only fruits left in the fridge and I liked it so much that I decided to include it in my list of favorite smoothies. It is super light and fresh, perfect for hot days and is full of vitamins and beta-carotenes (1), ideal for the skin and to strengthen the immune system. The carrot gives it a very special touch and with blueberries on top … perfect!

Gluten-free, nut-free, sugar-free, Vegan
Yield: 2 bowls
Time: 5 min

Ingredients
2 frozen bananas
1 orange
1 carrot
½- 1 cup of almond milk

Toppings
Hazelnut and chocolate granola
Blueberries
Goji berries
Shredded coconut
Chia seeds
Hemp seeds
Dark chocolate

Directions
1. Place all the ingredients in a high-speed blender or food processor and blend until you get the desired texture (for a thinner texture add more milk, for a thicker one, less)
2. Serve with your favorite toppings or with the suggested ones.

By the way…
You can use any topping you have on hand.

Regarding smoothie bowls, I don’t really like freezing or storing them, I find that is better to consume them right after blending them because otherwise the texture and color vary. It literally takes a couple of minutes, so I always prefer to do it and take it fresh.

It is not very filling on its own, that’s why I find that with granola it makes a perfect and well balanced breakfast or snack, but of course you can leave it out or add almonds or any other nut or fruit to make it less caloric.
