This apple cinnamon baked oatmeal seems like the perfect definition of “Slow-down Sunday”. Although it may seem like it takes a long time to be on your table, it really takes 10 minutes to come together. The baking time is a little longer, but believe me, it is worth the wait. I really like leaving it in the oven while drinking a smoothie and playing with my dogs. After 20 min in the oven, the delicious smell to baked oatmeal and cinnamon starts to flood the house…

Eating oats and oatmeal is linked to many health benefits (1) they’re a gluten-free whole grain and a great source of important vitamins, minerals, fiber and antioxidants.

Let’s go!

Gluten-free*, nut-free*, refined sugar-free, Vegan
Yield: 4-6 portions
Time: 1 hr

Ingredients
2 cups (200 gr) rolled oats, gluten-free if necessary.
⅔ cup (130 gr) almonds
½-1 cup (50-100 gr) of cranberries (divided into 2)
1 tsp baking powder
1 pinch salt
2 tsp cinnamon
3 Tbsp (45 ml) maple syrup
2 flax eggs
1 tsp vanilla extract
2 cups (500 ml) vegetable milk
3 Tbsp (45 ml) vegetable butter, melted
2 apples, cut into small cubes
½ cup (70 gr) coconut sugar (or unrefined brown sugar)

Directions
1. Preheat the oven to 180C and prepare your baking tray by lightly greasing it.
2. Combine oats, almonds, half of the cranberries, coconut sugar, baking powder, cinnamon, and salt in a bowl.
3. Add in the flax eggs, maple syrup, milk, and melted (chilled) butter in another bowl until well combined.
4. Place the apple cut into small cubes in your greased mold. Add on top of the apple, the mixture of oats and almonds, and on top of it, the mixture of milk and eggs.
5. Top with the other half of cranberries.
6. You can add a little more coconut sugar on top to give it a crunch.
7. Bake for around 45-50 minutes (until you see that it is golden brown) let cool and serve with yogurt or on its own with a nice cup of coffee.

By the way…
You can keep this baked oatmeal in the refrigerator for 3-4 days in an airtight container and simply reheat it before eating (or eat it cold).

I strongly recommend you to try it with vanilla vegetable yogurt.

For a nut-free version just leave out the almonds. Otherwise you can of course use any other nut, I guess with walnuts must taste delicious, but since I am very allergic to walnuts I will never know.
