This 10 min Pad Thai Noodles is super easy and fast to do and is incredibly flavorful, crunchy and delicious. It is infused with a creamy peanut butter sauce and it contains plenty of vegetables and colors!
What are Soba Noodles?
Soba is Japanese for buckwheat, which is a nutritious seed that’s gluten-free and absolutely unrelated to wheat, so yes 100% gluten free. (1)
Now… not every soba noodle package is the same. The authentic one (called sometimes juwari soba) is made exclusively with buckwheat, flour and water. There are other brands and types made with refined wheat flour in a proportion of about 20%. These ones are called hachiwari.
On top of that others contain even more wheat than buckwheat. Whenever you see in the label that wheat flour is listed the first, that means that wheat is in a higher proportion than buckwheat. So always read first the label to be sure what you are buying (especially if you are gluten intolerant).

10 min Pad Thai Noodles

200 gr Soba Noodles
1 carrot, sliced
1/2 red bell pepper, diced
1/4 cup fresh parsley
1/2 cup purple cabbage
1/2 cup chopped green onion
1/3 cup roasted peanuts
Thai sauce
1/4 cup (60 ml) tamari/soy sauce
4 Tbsp (60 ml) Maple syrup
1 Tbsp sesame oil
1 Tbsp Sriracha
1 Tbsp fresh ginger, finely minced
Juice of half lime
1-3 Tbsp warm water
1/3 cup (80 ml) Peanut butter
Directions
- Prepare, wash and chop all your veggies.
- Prepare your sauce; combine all the ingredients in a bowl or measuring cup adding more water to thin to preferred consistency.
- Boil your noodles according to package instructions.
- Assemble; in a large bowl combine the soba noodles with the rest of the ingredients of the filling and pour the sauce over it. Combine well and serve.

- By the way…
- This 10 min Pad Thai Noodles is perfect for meal prep as it will last you for a couple of days in the fridge. Before serving I like to let them rest at room temperature for about 20 min, but there is no need to warm them.
- Either if you will store in your freezer or fridge I recommend you to leave the peanuts and the sauce for right before serving as it will become soggy otherwise.
